Breakfast Muffins Recipe

This Breakfast Muffins recipe is totally our own recipe. We have called it a breakfast muffin as we included muesli and orange juice in the recipe. To make this recipe healthier, you could use wholemeal flour and carotino oil instead. These muffins are at their best when eaten warm!

Makes 12 Muffins

Recipe Ingredients

9oz Plain Flour
1tsp Baking Powder
1tsp Bicarbonate of Soda
4oz Golden Granulated Sugar
2oz Muesli (or Porridge Oats)
4-6oz Mixed Berries
1 Egg
Juice of 1/2 an Orange
1/4 Pint of Milk
3floz Corn Oil

Recipe Method

  1. Sieve the flour, baking powder and bicarbonate of soda into a large bowl.
  2. Stir in the sugar and muesli.
  3. In a separate bowl, beat the egg and add the other wet ingredients. Mix well.
  4. Add the wet ingredients to the dry and stir until the flour is not visible.
  5. Finally, stir in the berries and place in the muffin cases.
  6. Bake for 20 minutes at 190˚.
  7. When cooked, place the muffins on a wire rack to cool.
