Tarte au Citron Recipe

This Tarte au Citron recipe is a classic French dessert found all over France. I love
this dessert as it has a zingy citrus taste and it is wonderful in the summer to
eat. You can serve this dish on its own or with cream/ice-cream.
Serves 8

Recipe Ingredients (for pastry)
180g Plain flour
120g Unsalted butter
1 large free range egg yolk
70g Golden caster sugar

Recipe Method (for pastry)
- Mix flour and butter until it turns into bread crumbs (by hand or food
processor).
- Stir in golden caster sugar.
- Add egg yolk to form a soft dough (add water if necessary).
- Wrap dough in cling film and chill for 30 minutes.
- Roll out dough and line the pie dish.
- Chill for 15 minutes.
- Bake blind (line with baking paper and weight it down with beans) at
180˚C for 15
minutes.
Ingredients (for filling)
6 free range eggs
260g Golden caster sugar
Juice and zest of 3 organic, unwaxed lemons
150ml Double cream
Method (for filling)
- Whisk eggs and golden caster sugar.
- Add lemon juice and zest (whisk well).
- In a separate bowl whisk cream to ribbon stage.
- Fold cream gently into egg mixture.
- Pour mixture into pastry case.
- Bake for approximately 25 minutes at 160˚C.
