Fajita Recipe

This Fajita recipe comes from Mexico and is often very spicy. Shredded lettuce, sliced
onion, grated cheese and sour cream are ideas to put in your fajita. My
favourite meat to use in this recipe is chicken but the Mexicans use beef as well. Be inventive
and create your own master piece.
TIPS:
1. Do not fill your tortillas too much, otherwise the filling will fall out.
2. When making your fajita taste as you go along and add the as much spice as
you like.

Recipe Ingredients (for fajitas)
1 Onion
1 Clove of Garlic
2-3 Chicken Breasts
2-3 tbsp of Fajita Spice Mix
1tsp cumin
1tsp oregano
1 Tin of Chopped Tomatoes (400g)
1 Red Pepper
Handful of Fresh Coriander
Tortillas
Recipe Method (for fajitas)
- Slice and fry onions in oil until soft and golden.
- Add chopped garlic & sliced pepper.
- Fry for another minute.
- Set aside.
- Chop and mix the chicken with fajita spice and fry until brown.
- Add onions, pepper, garlic, cumin, tomatoes, oregano and season.
- Bring to the boil then simmer until chicken is cooked and sauce is
thickened.
- Add chopped coriander.
- Warm the tortillas and make up you fajita.
Ingredients (for salsa)
1 Small Red onion
1/2 Cucumber (skinned/seeds removed)
3 Large Tomatoes (skinned/seeds removed)
2 tsp of Chilli sauce
Juice of 1/2 a Lime
1 tbsp of Olive Oil
A handful of Fresh coriander
Seasoning

Method (for salsa)
- Chop the vegetables very finely.
- Mix in a bowl with the other ingredients and season.
